One of my favorite go-to warming meals is an easy chicken breast tortilla soup by Nancylynn of Confessions of a Fit Foodie! It’s a little spicy, a lot delicious and so so so easy! You literally throw everything in your Instant Pot and let it do it’s thing for 15 minutes! (You can also easily make it without an Instant Pot!).

Another thing I love about this soup is that it has a ton of vegetables! Corn, tomatoes, onion! You could also easily make it plant based by taking out the chicken, switching to vegetable broth and doubling the black beans!

The recipe calls for homemade tortilla strips which are totally simple! I use a pizza cutter to cut nice thin strips. You could also use store-bought tortilla strips or straight up tortilla chips! (Chose corn tortillas if you need to keep the soup gluten free).

Once the Instant Pot has ran it’s course you take out the chicken, shred it then re-add to the soup! Its so much quicker to shred the chicken AFTER it’s cooked than trying to slice it raw before putting it in!

Once it’s done you can get super creative with toppings! Tortilla strips, avocado, cilantro, green onion, lime and sometimes I add cheese too! Depending on the macros I want to hit the toppings offer a ton of versatility specifically with grams of carbs (tortilla) and fat (avocado/cheese).

You can totally freeze the soup without the toppings for later too because it makes a huge batch!
