Chocolate Protein Muffins

This is a recipe that I got from one the other girls that follows kayla itsines bikini body guide — I saw a picture of these muffins on her instagram and had to get the recipe! They are very simple to make and are great to have for breakfast, pre or post workout snack, or even as a treat after dinner…covered in peanut butter of course =)

In one bowl mix the following ingredients:
» 1/3rd cup oat flour (I just chop quaker oats in a food processor)
» 1 scoop chocolate protein powder
» 1.5 tbsp of cocao powder
» 1 tbsp baking powder
» 1/4 tbsp baking soda

In another bowl mix:
» Mash 2 ripe bananas (I just microwaved 2 to soften them before mashing)
» 1 egg
» 1/4 cup stevia (I honestly don’t think the recipe needs this much. Next time I will probably do half this amount. You also don’t have to use stevia, you can use whatever sweetener/sugar you’d like)

Then:
1. Combine the wet and dry ingredients
2. Mix!
3. Pour into muffin tins (spray with cooking oil first!)
4. Put into oven that should be set at 350 degrees
5. Cook for 18-20 mins or until tops are nice and firm

For me, I was able to make 5 muffins with these ingredient amounts. Since I am the only one eating them, it was a perfect amount since they only last about a week before they get too hard to eat!
