Coconut-Pineapple-Banana Bread

While I probably spend too much pointless time on instagram, sometimes it pays off! This coconut and pineapple banana bread that I found there is pretty quick and easy in terms of prep, and then just throw it in the oven and you’re good to go! Also, it is a clean recipe so you don’t have to worry about indulging with a few slices =)

So the ingredients you need are as follows:

Dry Ingredients
»1 1/2 cup oat flour
»1/2 cup coconut flour
»5 Tbsp coconut flakes
»1 tsp baking soda

Wet Ingredients
»4 ripe bananas
»1/2 cup tiny pineapple chunks
»150 g vanilla greek yogurt
»2 eggs whites (1/3rd cup)
»1 tsp vanilla extract

Instructions:
1. Preheat oven to 350
2. Mix all dry ingredients
3. Mash bananas in a separate bowl and then mix wet ingredients with them
4. Mix both dry and wet mix together
5. Grease pan and pour in mix
6. Cook for approximately 30 minutes

Pour batter into greased baking pans (recipe calls for one large pan but I made 3 miniature ones)

Just some notes about this recipe…
1. I used whole wheat flour instead of coconut flour
2. I used 3 bananas instead of 4
3. Next time I make this, I plan to chop the pineapple up into smaller pieces…more like finely dicing them instead of chopping them. I think the larger pieces made the batter around them not cook as well (if that makes sense?)

Overall though, I really liked the recipe and it’s nice to mix it up from regular whole grain bread!
